The Harvest

The journey of our extra virgin olive oil begins in the sun-drenched groves of Monti Iblei in Sicily, where centuries-old olive trees are still handpicked today, just as they have been for generations. Harvested while still green and at their peak ripeness, the olives retain a high concentration of polyphenols, enhancing the oil’s rich aroma, complex flavor, and health benefits

Preserving Purity

Cold Pressing

Within a few hours of harvest, the freshly picked olives are transported to the mill to undergo cold pressing. This delicate process, done at low temperatures, protects the oil’s natural antioxidants and aromatic complexity, resulting in an premium olive oil

Refining Excellence

Filtration & Decanting

After extraction, the oil is gently filtered or naturally decanted to remove any remaining olive particles, ensuring a crystal-clear texture while maintaining its full-bodied character.
